So I’m never sure if anyone is actually seeing these posts but I like having them to look back at myself.
Ive been exploring more options with this dough. I kind of feel like I hit a turning point with it this evening. Half batch to night.
1.5 cups shredded mozzarella
3/4 tablespoon cream cheese
teaspoon and a half nutritional yeast
few shakes of sea salt
melt and combine. Start preheating oven at 425 F.
1/2 cup almond flour
one egg combine yolk and white
*mix the flour and egg*
add half the flour egg paste to the cheese melt, stir and combine. Take off heat and add remaining egg/flour paste. Combine and fold. Transfer to parchment paper
begin folding paper in half while rolling out dough
each fold over will help bind everything
My original intention was to make two large ham and cheese croissants (hence the diagonal cut)
i started to remember the last time I attempted this and realized that I wasn’t a huge fan of the endless cheese and meat center. I decided 4 smaller crossiants would be the best remedy.
i was wondering outloud the other day to my friend peter, “I wonder how adding mustard to the dough would go?” So I decided to give it a shot.
And here I people I don’t paint any more!
now here’s when all the strict Keto followers will probably get grossed out. Yep, it’s American cheese! As least it’s not KRAFT! It just melts too well and hey, no carbs! (Just orange dye no. 5)

I’m sure Peter will be able to tell me the real name for it but let’s call it an envelope! I was tempted to add a name in mustard and a ham or cheese “stamp” (imagine that at a food truck!)
